I am choosing to believe the weather is starting to improve, so I am dusting off some of my summer favourites which are not only delicious but good for the microbiome too:
Nutrition Bomb
Blitz a glove of garlic, 1 avocado, 3 tablespoons Velvet Cloud yoghurt, a fist of spinach, some mint leaves, a squeeze of lemon juice and salt and pepper - this is (in the words of Nutrition Coach Heather Maguire) a Nutrition bomb! It makes a wonderful filling for wraps pittas or in a salad or poke bowl.
Barbeque Drizzle
Mix a half a teaspoon of harissa with approx. 200 ml of live Velvet Cloud yoghurt, perfect drizzle on barbeque meats or to spice up a salad
Caesar Dressing
Blitz - 2 cloves garlic, 1 tsp Dijon mustard, 4 tbsp Velvet Cloud Yogurt, 2 tbsp olive oil, 2 tbsp white wine vinegar, Black pepper, 4 anchovies, 100g grated Rockfield Cheese – and I promise you, you will have the BEST Caesar salad dressing you have ever tried.
