Happy to say goodbye to the end of 2014
I’ve missed sending emails, blogging and getting all your lovely replies and comments back. Sincere apologies for the delay, but between storms and floods, snow and ice, illnesses, etc., we are waving happily goodbye to the end of 2024 and looking forward to what 2025 may bring.

Having said that we thankfully had a lovely Christmas and all junior shepherds were home so I was in my element, particularly since I’m acutely aware that in a few months time, I will have a very empty nest if the babiest of shepherds succeeds in his leaving cert and heads off to follow his siblings. So of course on Christmas Day, I made them stand for the obligatory family photo
The Snow Is Beautiful But Deadly
As I write we still have snow and ice all around the farm, it's beautiful but deadly.
In these temperatures, a nice chilled bowl of Velvet Cloud yogurt and berries isn’t that appealing. However I still need my protein, fibre and calcium, so instead I am grating a carrot, putting it, along with some oats, a pinch of cinnamon, a few drops of vanilla essence, some dried cranberries, some Velvet Cloud yogurt with a beaten egg all into a bowl and mixing. No time for measuring, if the mixture is too wet I add more oats, too dry I add more yogurt. Roll/squash them into scone-shaped balls and pop in the air fryer or oven, for approx. 30 mins on 180 C. (the time depends on the size of your scones). Serve warm with a little melted butter they are divine, the photos below don't do them justice.
