Millionaire Shortbread - or Chocolate Carmel Squares using Velvet Cloud sheep's yogurt instead of condenced milk

Millionaire Squares- Shortbread

Using Velvet Cloud yogurt and crème fraiche instead of condensed milk

Ingredients:

Shortbread

175g Unsalted butter

300 grams plain flower

50g Caster sugar

For Carmel

250g Unsalted butter

100 ml of Guinness

200 ml crème fraiche

100 ml Velvet cloud sheep’s milk yogurt

Chocolate Topping

200g plain chocolate

Shortbread

Place in a preheated over at 180 degrees C and cook for 20 mins. Allow to cool.

Carmel

Let butter and Guiness come to a simmer and reduce by half then add  yogurt and crème fraiche gently simmer for 20 mins stirring often or until mixture gets thick, pour over cooled shortbread, and put in the fridge for two hours.

Chocolate Topping

Melt chocolate in a bowl sitting in saucepan of simmering water, then pour over carmel mixture, let cool and cut into squares. The hide from everyone in the house !
