Peach and Lemon Lassi with Velvet Cloud Sheep's Milk Yogurt

Do you know what Lassi is?

I didnt know, but a quick google told me it "is an Indian yogurt–based beverage with a smoothie-like consistency"  The reason I was curious is that multiple award winning chef  and friend Martin Ruffley posted a delicious looking drink on Instagram, in which he used Velvet Cloud yogurt.  In the ingredients he also used Lemon Verbena Syrup another Google search was needed. 

Do you know what Lemon Verbena is ?

Apparently Lemon Verbena is a lemon-scented herb that has a number of culinary uses ranging from rich roasts to sweet citrusy desserts and jams. Lemon verbena can be used to make flavorful olive oil-based salad dressings, subtle lemon ice cream, and lemon verbena jelly, as well as season poultry dishes, salsa verde, and soups.

With the definitions out of the way, here is the very simple recipie for the lassi

Ingredients

Ripe peaches

Velvet Cloud Sheep's milk yogurt

Sea salt

Lemon verbena stock syrup

Buttermilk

Chopped Pistachio nuts for garnish

Velvet Cloud Sheep Yogurt Peache and Lemon Lassi

Method

Blend equal amounts of the peaches, and sheep's yogurt, add a pinch of the salt a few drops of the verbena syrup and use a little buttermilk to achieve the right consistency. Garnish with the chopped pistachio nuts.
