This is a delicious creamy limited edition Irish farmhouse cheese made in small batches using fresh creamy cow's milk from Michaels's uncle Michéál Waldron's (RIP) farm. The farm is now run by his son Domhnall, and this is where Michael grew up, enjoying hours in the townland of Cloonbook. The Cloonbook farm has been in the Waldron family for generations and is also where Michaels's mother, Mary (RIP), was born and raised. So the name Cloonbook is the perfect one for this cheese and evokes strong and emotional memories for many. Cloonbook is a semi-hard mild creamy cheese with milky, buttery undertones and is matured for at least three months. We'd love your feedback when you get a chance to try it!
