JP Michelin Start Chef and frequent media commentator was writing about how to cook broad beans and peas in this Saturday’s Irish Times, and recommending finishing off the lot with a big blob of sheep’s milk yogurt.
Lamb Burgers With Yogurt Sauce
In the Flanagan house lamb burgers are more popular than beef burgers, we find they have a lot more flavour. I found a delicious idea for a sauce for our next barbeque. Simply spoon ½ cup of Velvet Cloud yogurt into a small bowl. Squeeze the juice from half a lemon into the yogurt. Add 2 Tbsp. extra-virgin olive oil, some chopped coriander and salt and pepper to season. Using a small whisk or fork, mix until oil is fully incorporated. Plop a big blob of yogurt sauce and some rocket leaves on your cooked lamb burger, just before you sandwich it between two burger buns. You will thank me I promise!

Spreading The Sheep’s Yogurt Love – In SuperValu - Update
Some of our fantastic tribe (that’s you lot) are already out and about asking your local SuperValus to stock Velvet Cloud, now that its available on their central system. Anecdotally we are hearing back that a lot of the stores: either haven’t seen the email from HQ so they don’t know about it, or they don’t have time to do anything about it, or they’ve forgotten about the fact they can now stock it, and order it on a daily basis if they want to. So, if any of you like nagging now is the time, we really need you.
There are over 600 SuperValus and Centras in Ireland so we haven’t a hope of visiting them all any time soon. The junior shepherds stuffed 80 envelopes with fliers last week and we got those in the post and I am on the road from tomorrow trying to cover some stores. So do not underestimate what a quick word in a store managers ear could do to help a small business.
