Perfect Vegetarian Paella with Aubergine and Velvet Cloud Yogurt

As well as Michelin star Aniar in Galway JP also owns Cava Bodega focused on Spanish food and tapas also in Galway city. Yesterday in the magazine JP gave us three perfect paella recipes to give a little taste of Spain. We were delighted to see an Aubergine and Velvet Cloud Paella with Pine Nuts and Sultanas, perfect for a Meat Free Monday or for a vegetarian in your life . The puree that JP makes for this is not unlike the Baba ghanoush recipe we already have on the blog although I suspect that using smoked paprika in the Baba ghanoush would overpower the saffron in the rice in this case.  Although what do I know, I’m not the Michelin star chef, I’ll ask the man himself in two weeks’ time when we see him at Food on The Edge which is an amazing international symposium of chefs and all those interested in Food culture. I’ll definitely be reporting back on that event.
